Hallelujah springs to mind.
We arrived in Lund just as the rains stopped, the winds blew the clouds ragged and then the air shifted to a barely perceptible, but most-assuredly-there, warm breeze…a promise that summer really is going to visit us after all.
We stayed at the Historic Lund Hotel where, depending on your perspective, the Trans-Canada starts or ends. The hotel is in a great location overlooking the marina and strategically located near Nancy’s Bakery and their world-famous cinnamon buns.
Not so well known, at least to me, was Terracentric Coastal Adventures. But this morning, Kevin & I met with Christine Hollman, the director of operations, and now we’re trying to figure out when we can come back to plan a kayak trip with her. You know when you just instantly know someone’s cool? That’s her. Next Lund trip will definitely include something organized by Miz Christine.
And the other discovery? Last night’s dinner at the Laughing Oyster. Ray & Judy drove up from Powell River to be our taxi shuttle and dinner companions. They picked us up from our perch in the pub at the Lund Hotel and then Ray drove us a short way up Malaspina Road and to this little place overlooking Okeover Inlet.
I am thinking that we’re fairly remote. That is, until we open the doors of the Laughing Oyster. The place is stuffed silly with people. It seems we landed on the very popular Wednesday Buffet Night. Chef David Bowes was slicing the pork, talking up a storm and generally making the whole thing happen.
Great food, great view, and it sounds like they have some really fun nights with music and artists and whatever else Chef David can line up. I know that if I lived in the area the Laughing Oyster would be on the weekly circuit of must-sees.
